Slow cooking has to be the best way of making soup – so low effort. And such deep flavours. And whilst I’m determined to try and mix things up a bit this season, Butternut Squash Slow Cooker soup is my all time favourite. Other squash work well too though – see pictures! – I have to confess I don’t know their names!
Slow cookers are brilliant for sauces and soups – you can blitz them while they’re still in the slow cooker with a hand blender and voila! Jobs a good ‘un.
Ingredients and directions
The main ingredient is loads of lovely vegetables; those of you with a sweet tooth may like to team their butternut squash with carrots and onions.
My first job is always to roast the butternut squash face down in olive oil. This adds a lovely depth of flavour and also removes the need to peel the butternut squash – you can just scoop it out instead. Roasting them like this is a short cut that tastes better – win win.
We cook ours on low for around 3-4 hours, but I’m sure you could use the high setting for a shorter amount of time.
The thing I love most about it is that it is such forgiving recipe – actually that’s a lie, the thing I love most is eating it. But it is a super forgiving recipe – you don’t need to be super precise.
Today I poured a generous amount of stock (about a pint) and a can of coconut milk over two Butternut Squashes and three, roughly chopped, red onions.
When it gets near eating time, I blitz the soup with a hand blender whilst its still in the slow cooker. Watch out as splashes will be hot. This means that if it is a bit runny, I have chance to thicken it up by cooking it with the lid off until it is time to eat!
Vegan Adult Twist; add some @oatly vegan creme fraiche and a sprinkle of cayenne pepper. Its spicy so you won’t need much. Amazing. Kid’s twist; I sometimes sweeten with a bit of apple baby food.

For those of you that like lists here is a reminder of what you need…
- Butternut Squash (I like to use two and freeze some soup!)
- 3 onions
- 4-5 carrots if desired
- Vegetable Stock
- Coconut Milk
- And for the adult twist… Cayenne Pepper
- Oatly Creme Fraiche
- Apple Puree
The squash are so gooey, sticky and yummy after roasting in the oven – it is so worth it! 🙂 Mmmmm Butternut Squash Slow Cooker Soup…..I’m actually feeling a bit better about it being Autumn now.
